Ingredients

500 g deep-frozen shredded codfish Riberalves
800 g of small potatoes
1 onion
2 garlic cloves
1 large can of peeled tomato
1 dl of white wine
4 tablespoons of olive oil
1 bay leaf
1 bunch of coriander
Nutmeg q.s.
Salt and chili q.b.

Defrost the shredded codfish. Peel and wash the onion and garlic cloves, chop them finely and place them in a pan.

Add the olive oil, bring to the boil and simmer, stirring occasionally, until everything is soft. Add the peeled tomatoes with the sauce and cook for another 5 minutes. Remove from the heat and mash lightly with a hand blender.

Bring to the boil again, add the bay leaf, the codfish, the coriander sprig, the white wine and a little more water if necessary, season with nutmeg, salt and chilli and cook for another 12 minutes.

Peel and wash the potatoes, boil them in water seasoned with salt, then drain them and serve with the codfish. Garnish with more chopped coriander.
