Gomes de Sá style codfish

Nothing better than a traditional recipe, try this recipe for Gomes de Sá style codfish and Bon Apétit!

Ingredients

800 g of deep-frozen soaked traditional cod fillets Riberalves
1.2 kg of potatoes
4 onions
3 cloves of garlic
4 eggs
1 dl of olive oil
vinegar q.b.
Morrones peppers q.b.
Olives q.s.
parsley q.b.
Salt and pepper q.b.

Preparation

Nothing better than a traditional recipe, try this recipe for Gomes de Sá style codfish and Bon Apétit!

Set the oven to 200 ºC. Peel and wash the potatoes and boil them in salted water. Add the eggs and when the water starts boiling let them cook for 12 minutes. Then remove and let them cool. Drain the potatoes, let them warm, remove the skins and cut them into rounds after they have cooled.

Bring a pan of water to the boil, add the codfish fillets, and cook. Then drain, let it warm a little and remove the skin and bones. Shred the codfish and set aside.

Peel and wash the onions and garlic cloves, slice the onions, and chop the garlic. Heat the olive oil in a pan, add the onions and the garlic cloves, season with salt and pepper and fry until the onions are golden brown. Remove it from the heat, drizzle with a few drops of vinegar and set aside.

Alternate layers of potato and codfish in a baking dish or pyrex dish. Finally add the onion mixture and the sliced eggs and bake in the oven until golden brown. Remove, place strips of peppers and olives on top, sprinkle with parsley and serve it Gomes de Sá style codfish liking.
