Grandma’s Codfish

Ingredients

800 g deep-frozen soaked cod fillets Traditional Riberalves
1.2 kg of potatoes
2 large onions
3 cloves of garlic
2 dry buns (2 days old)
2 dl of olive oil
1 teaspoon of paprika
1 bay leaf
1 sprig of chopped parsley
Salt and pepper q.b.
Frying oil

Preparation

Defrost the codfish fillets, rinse them, put them in a pan, add water until they are covered, bring to the boil, turn off the heat and let the codfish cool in the water.

Meanwhile, peel the potatoes, wash them and place them in a bowl with cold water seasoned with salt for 10 minutes. Then drain them, fry them in oil until golden brown, remove them and let them drain.

Clean the codfish from the skin and bones and shred it. Peel the onions and garlic, cut the onions into thin half-moons and chop the garlic. Cut the bread into small pieces, mince them until they become like breadcrumbs, pour into a bowl, add the paprika and mix.

Heat the olive oil in a pan, add the garlic and cook until golden brown. Add the onion and the bay leaf, stir and cook until the onion is golden brown. Season with salt and pepper.

Pour the fried potatoes into a dish tray, spread the codfish on top, cover with the onion mixture, sprinkle the bread mixture with paprika and bake in a preheated oven at 180°C until golden brown. Remove and serve sprinkled with chopped parsley.
