Lagareiro-style Codfish Loins

Ingredients

4 Riberalves Codfish Loins
Olive oil to taste
400 g baby roasting potatoes
Salt to taste
4 cloves garlic
1 bunch turnip greens

Preparation

To make some delicious Lagareiro-style Codfish Loins, just follow the recipe below, step by step, and enjoy.

Thaw the codfish loins, rinse them under cold running water, dry them well with kitchen paper, brush them with olive oil and bake them in a preheated oven at 200 °C for 15 to 20 minutes. If you prefer, cook them on the barbecue.

Cook the potatoes in salted water then put them into an ovenproof dish, drizzle generously with olive oil and put them in the oven to brown. Then remove them and punch each potato lightly to split them open.

Fry the sliced garlic cloves in 2.5 dl olive oil until golden.

Put the codfish loins and the potatoes into an ovenproof dish, drizzle with the olive oil and sprinkle with the sliced garlic. And your Lagareiro-style Codfish Loins are ready.

Serve them immediately along with some sautéed greens.
