Codfish and Vegetables Curry

Ingredients

1 cod fillet
1 Tablespoon of olive oil
1 clove of garlic in slices
1/2 chopped onion
1 Teaspoon Curry Powder
2 bay leaves
1 Carrot in slices
1/4 courgette, cubed
1 cup cauliflower in pieces
1 cup of coconut water

Preparation

  1. Defrost the codfish and break it into large flakes.
  2. Place the olive oil, garlic, onion, bay leaf and curry powder in a pan.
  3. Cook over a low heat until the onion is translucent. Add the remaining vegetables and the coconut water.
  4. Let it cook (about 20 minutes, or until it is to taste) and add the codfish. As soon as the codfish is ready, turn off and serve hot.
