Ingredients
2 large chopped onions
250 ml of extra virgin olive oil
2 garlic cloves
1 teaspoon of oregano
Salt and pepper
Water
2 cups of rice tea
4 ripe tomatoes without skin or seeds, sliced
1 bunch of parsley
1 sprig of chives

Heat the onions in olive oil, let it blaze and add half the codfish flakes. Mix well and add the crushed garlic, oregano, salt, and pepper. Add the rice, stir, and add preheated water. Leave to cook for about 5 minutes, drain well and set aside.
Fry the remaining cod and tomato in the olive oil. Place, on a baking tray greased with olive oil, a layer of rice and another of codfish with tomato. Do this until the ingredients are finished. Sprinkle with more oregano, cover with foil and bake in a medium oven for about 30 minutes.
Remove and serve the Oven baked codfish rice sprinkled with parsley and chives.
