Ingredients
Olive oil
400 g bread from the previous day
1 cucumber
600 g fresh ripe tomatoes
1 red onion
Basil to taste
Salt to taste
Black pepper to taste
Vinegar to taste

Allow the codfish steaks to defrost, dry using kitchen paper and fry in hot olive oil for 4-5 minutes on each side. Allow the fish to cool down slightly, remove the skin and bones and flake.
Cut the bread into 1 cm cubes and soak in 250 ml water for approximately 20 minutes.
Peel and dice the cucumber. Dice the tomatoes, cut the onion into half-moon shapes and finely slice the basil leaves.
Place the vegetables in a large salad bowl, add the soaked break and codfish flakes and season with salt, black pepper, olive oil and vinegar. Stir to combine all ingredients.
Serve the Panzanella with codfish flakes, cold or at room temperature.
