Codfish rice

Ingredients
400 g of carolin rice
1 large onion
3 cloves of garlic
1 can of diced tomato
0.5 dl of olive oil
1 vegetable bouillon cube
1 bay leaf
Parsley or coriander q.b.
Salt and chili q.b.
Preparation

Defrost the codfish stew. Peel and wash the onion and garlic cloves and chop them finely.
Heat the olive oil in a pan, add the onion, the garlic and the bay leaf and let it braise until soft. Then add the tomato, stir, and let it braise for another 5 minutes.
Add 1.2 L of water and the vegetable stock and bring to the boil. Then add the rice and the codfish and cook for 20 minutes, stirring occasionally. Rectify the salt, season with chili, remove from the heat and serve immediately sprinkled with a little parsley or chopped coriander.
