500g of potato
150g of chorizo, p.p.
150g of onion
100g red pepper
100g of capers
30g of parsley
salt and black pepper q.b.

Place the codfish on an oven tray with a drizzle of olive oil and bake at 160ºC for 25 minutes; shred and set aside.
Peel the potatoes and cut into cubes; cook the potatoes in salted water until “al dente”. Set aside.
Cut the onion into julienne strips; cut the peppers into julienne strips; remove the skin from the chorizo and cut into wedges.
In a frying pan add a drizzle of olive oil and sauté the peppers until tender; add the onion and chorizo and sauté until translucent.
Add the flaked codfish, potatoes and capers to the mixture and stir; adjust seasoning with salt and pepper.
Separately, beat the eggs until smooth; chop the parsley and add to the codfish mixture.
Pour the beaten eggs over the codfish mixture; shake the pan lightly to coat the egg with the mixture.
Cook The Tortilla of Codfish Chorizo and Capers in the oven at 160ºC for 15 minutes or until done and serve immediately.
